I baci di dama salati di raravis - Diffidate delle imitazioni-
per una quarantina di baci di dama, grandi come l'unghia di un pollice
100 g di burro freddo
100 g di farina di mandorle
100 g di farina 00
70 g di parmigiano reggiano
un tappo di brandy
una presa di sale
Tutto nel mixer, fino a quando la pasta non forma delle briciole, poi trasferite sulla spianatoia e lavorate velocemente a mano. L'anatema è lo stesso della frolla- guai a voi se bruciate il burro.
Mettete l'impasto in frigo per una mezz'ora se è ancora piuttosto sodo, tutta la notte, se lo avete lavorato troppo ed è troppo morbido
Prendete una teglia a bordi bassi ( quelle da biscotti vanno benissimo) e ricopritela con un foglio di carta da forno.
Riprendete l'impasto e prendetene quel tanto che basta per formare una pallina. Fatelo velocemente , disponendo via via le varie palline sulla teglia, adue dita di distanza l'una dall'altra. Accendete il forno a 150 gradi e fate cuocere per 15- 17 minuti max: dovete tirarli fuori quando sono appena appena compatti e non preoccupatevi se si sbriciolano, a toccarli. Al contatto con l'aria, si induriranno, senza per questo perdere nulla della loro fragranza
Quando sono freddi, farciteli così
- al pesto: 250 g di philadelphia, 2 o 3 cucchiai di pesto
- al salmone: preparare una mousse al salmone (io uso la robiola, la trovo più delicata del burro o di altri formaggi), secondo la vostra ricetta.
Di norma, più stanno lì, più sono buoni: il consiglio è di tirarli fuori dal forno, farli ben raffreddare e poi metterli in una scatola di latta, ermeticamente chiusa.
Reggono bene anche da farciti: potete prepararli comodamente anche 3 o 4 ore prima di servirli, senza bisogno di tenerli in frigo (il che non significa, ovviamente, posarli sul calorifero)
Sono l'equivalente della Stupendissima, sul fronte salato, sia per bontà che per paternità.
