Acciughe al limone "in bianco" alla Carla

Sulla scia delle ricette salate veloci ma saporite, oggi torno per voi sul pesce azzurro: ancora acciughine, ma questa volta preparate in modo un po' diverso. Intanto per non perdere il vizio me ne sono fritta qualcuna, come antipasto stuzzicante....
Acciughe al limone in bianco
- 8 hg di acciughe fresche
- 1 limone molto succoso (altrimenti 1 e 1/2)
- 1 (o 2 dipende dai gusti) di aglio
- 1 mazzetto di prezzemolo
- olio extra vergine di oliva (evo)
- sale
- peperoncino
Pulite e tritate il mazzetto di prezzemolo: tenetene da parte un po' e aggiungete all'altra parte l'aglio anche lui tritato. Prendete ora una casseruola larga e bassa, versateci dentro un filo di olio aggiungendo il prezzemolo e l'aglio tritati. Ponete sul fuoco aggiungendo immediatamente (altrimenti il prezzemolorischia di bruciarsi , diventando amaro) le acciughe con il succo spremuto del limone, il sale e un pezzetto di peperoncino. Muovetele delicatamente con un mestolo di legno e incoperchiate, cuocendo a fuoco medio per circa 5 minuti.
Trascorso questo tempo togliete il coperchio, controllate che siano belle bianche per la cottura e poi cospargetele con un poco di prezzemolo tritato senza aglio e servite ancora tiepide. Sono ottime anche sole, ma ottime accompagnate da un bel piatto di
..... ora, non sto qui certo a spiegarvi la ricetta di una cosa così semplice.... mi limito a racontarvi come me le prepara la mia mamma: lessa le patate con la buccia un po' di tempo prima, poi al momento di servirle, le sbuccia, le taglia in pezzetti grossolani e le passa in padella con poco olio e un po' di prezzemolo e tritato (e un pochino d'aglio...se piace). Si servono calde insieme alle acciughine e al loro guazzetto.

Anchovies in White with lemon
- 28 oz. of fresh anchovies
- 1 very juicy lemon, (otherwise 1 and a half lemon)
- 1 or 2 cloves of garlic, depending on your taste
- 1 bunch of parsley
- EVO oil
- salt
- chilli pepper
Clean the anchovies, removing heads, bones and entrails and rinse thoroughly. Clean and chop the bunch of parsley: keep a little apart and mix the rest with the garlic, minced.Put a large and low pan on low heat and pour the the oil in.Add the mix of parsley and garlic and stir, taking care not to burn the parsley and the garlic!Add the anchovies, the lemon juice, the, salt and a bit of chilli pepper. Turn the heat on medium and stir gently.Cover with a lid and let it simmer for about 5 minutes.Remove the lid, the anchovies should be white, sprinkle the remaining parsley on top and serve immediately.The anchovies can be eaten alone or with the following side dish

it is a very simple recipe, therefore I will just tell you how my mother cooks it.She boils the potatoes and right before serving them she peels them off and cuts them into coarse pieces, heats them up with a little oil, sprinkles some parsley and serves them.Serve them warm along with the hot anchovies and their sauce.
