Cuori di grano saraceno con bresaola
Giurin giuretto questa è l'ultima ricetta smaccatamente montana.... ma è talmente saporita che proprio non sono riuscita a evitare di proporvela. Stamatina ci siamo dedicate a prepararli con mia figlia grande, cosa di per se incredibile, perchè di solito lei parte piena di belle intenzioni, ma poi alle prime "difficoltà" sparisce, anzi "evanesce", tanto per mantenerci in clima nevoso! Invece stamani è rimasta con me, almeno fino al momento in cui abbiamo deciso che forma utilizzare per ritagliarli e poi, naturalmente, è sparita quando è stato il momento di "lavorare"!!!
Comunque questo è stato il risultato dei nostri sforzi ed è stato veramente ottimo.....
Per la pasta:
- 150 g di farina bianca
- 100 g di farina di grano saraceno
- 2 uova intere
- Acqua
- Sale
Per il ripieno:
- 100 g di bresaola
- 100 g di patate
- 100 g di panna montata
- 100 g di ricotta
- 50 g di parmigiano reggiano
- Noce moscata
- Sale e pepe
Impastate nel solito modo e fate riposare la pasta. Nel frattempo macinate finemente la bresaola e mettete a cuocere le patate con la buccia. Appena cotte, sbucciatele e passatele al passaverdura. Amalgamate ora la bresaola con le patate, la panna montata (ovviamente non zuccherata ;-)), la ricotta, il parmigiano grattuggiato, la noce moscata, sale e pepe quanto basta.
Tirate metà della pasta in una sfoglia (nella mia nonna papera a mano sono arrivata al numero 5), e preparate i ravioli mettendo l'impasto in piccoli quantità, a distanza di circa 3 cm, sulla sfoglia. Ricoprite con un'altra metà della pasta, anch'essa tirata in sfoglia: premete con le dita in modo da far aderire le due sfoglie
e tagliate con la solita forma di raviolo o, come ho fatto io, date con un coppa pasta la forma che preferite, nel mio caso un cuore (eventualmente potreste utilizzarlo per il prossimo San Valentino, che ne dite?).
Cuocete in acqua bollente per 10/12 minuti e servite :
1) con burro fuso e parmigiano (questi invece li ho ritagliati con la forma preferita dalla piccola, i famosi fiorellini!). Semplici, ma eccellenti.
2) se vi dovesse avanzare un po' del ripieno, come è successo a me, scioglietelo in una piccola casseruola con un po' di latte o panna, scaldandolo appena : sarà un condimento squisito!

I promise you that this is the last typical recipe from Valtellina.... but it is so flavorful that I just have to propose it. This morning my daughter and I prepared these “little harts”, and it’s so strange to work with her : since when she was very little she is always full of good intentions, but then, at the first "difficulties" she “vanishes”, and is back again only when everything it’s over! Instead she stayed with me this morning, at least until we decided what form to use to crop and then, of course I made the “harder work” alone!!!However, this was the result of our efforts and it was really good .....
BUCKWHEAT HARTS WITH BRESAOLA
I found the recipe here after tasting them during an excellent dinner at the home of friends of friends. I made a single change in the proportions of buckwheat flour and flour 00.
Serves 4
For the dough:
1 1/3 cup white flour
3.5 oz buckwheat flour
2 eggs
Water
Salt
For the filling:
3.5 oz of bresaola
3.5 oz potatoes
3.5 oz of whipped cream
3.5 oz ricotta
1.7 oz parmesan cheese
Nutmeg
Salt and pepper
Mix the ingredients in the usual way and let the dough rest. Meanwhile, finely minced bresaola, and cook the potatoes with the skin. When cooked, peel and mash with masher. Mix bresaola with potatoes, whipped cream (unsweetened of course ;-)), ricotta, grated parmesan, nutmeg, salt and pepper to taste.Roll out half the dough into a sheet not too thin, and prepare ravioli by placing the mixture in small quantities, at a distance of about 3 cm, on sheet. Cover with another half of the dough , also rolled: press with fingers to adhere the two sheets and cut with the usual form of ravioli, or, as I have done, cut with the shape you like : I choose a heart (you can use it for next Valentine's Day, can't you?).
Cook in boiling water for 10-12 minutes and serve:1) with melted butter and Parmesan cheese (I cut these in the form of the little flowers, as I often do!). Simple but excellent.
2) But if you prepare a little more filling, you can heat it in a saucepan, with a little milk or cream: it will be a delicious sauce!
